Yes, 3/4" main lines/distribution manifolds with 1/2" runs to the fixtures seems to be the advised method. A bunch of good DIY YouTube videos about how to work with various PEX systems (good one here: https://www.youtube.com/watch?v=cy9w7bNJWfY). I like the looks of the Rehau product (https://www.youtube.com/watch?v=uCtnU9bQje4, can't get Stabil stateside, but the Flex is the same as their Raupex in the U.S., and fittings are the same), but there are others. The systems that require somewhat expensive tube end stretchers and collar pullers (like the Rehau) can usually be rented from local plumbing supply houses. If you lay everything out, using arcs vs elbows wherever possible, I should think you'd be able to make all the connections in a short day with a rented tool. And if you really want to get anal about it all, I'd run separate hot/cold 1/2" lines to each fixture, not just to the first fixture with a follow-on to the next. At least that's how it appears they do it in homes. Best system pressure for all fixtures, especially when some are being used simultaneously.

I think the small accumulators are mostly just to even out water flow from the pump if you have problems with water hammer and such. This two gallon tank, though, will pressurize the lines for a good long while before the pump needs to kick on. That's something to consider when traveling. Put a shutoff valve at the tank tee to turn it off while moving. If you don't, and something jiggles loose, you'll be mopping up a couple gallons of water when you get to your next destination.

There are various iterations of that big accumulator, it turns out. Same design, just different sku numbers for Pentair/SHURflo/Everpure. From what I can tell the internal pressure bladder is replaceable. Some info from my post over in the Yahoo group:

I managed to ferret out some more information on the SHURflo/Pentair/Everpure accumulator tanks.

First off, they're all basically the same company, just different divisions. The 3400-002 tank is the Marine/RV SHURflo product which is listed as *not* having a replaceable bladder. In speaking with the tech at SHURflo, he seemed to think that was just because there's not much call for it on their side of the house, thus no sku for the replacement part. Doesn't seem to have anything to do with the tank's design having/not having a replaceable diaphragm.

On the Pentair/Everpure side of the house, however, their two gallon tank is listed as either 14-053-00 (top bracket, like the 3400-002), or the 14-066-00 (side bracket). The 14-053-00 and 14-066-00 list a replacement diaphragm as being available. SHURflo part number for that is 94-697-00, Everpure is 41-230-00. Both are the same thing, just different skus. My feeling is that the Marine/RV 3400-002 would work with these replacement bladders.

Specs for all three tanks appear to be identical.

The SHURflo tech I spoke with seemed to think the bladder might be a bit more of an issue on the foodservice side, hence the need for a replacement part sku. He also said the bladders tend to be pretty long-lasting, so hopefully replacing one in our trailers wouldn't be an issue for a very long time. If it is, however, sounds like the two bladder skus I listed above would do the trick.

Oh, one other note...

When setting the high pressure cutoff point for the SHURflo pumps with that feature, the low pressure turn-on point is automatically set, i.e. you can't adjust the high/low points independently from one another.

I'll have to apologize, but I missed this post when you made it.....

Of course it depends how much the faucet is open, but I can easily wash my hands without the pump kicking on. So it's somewhere between constantly running when a faucet is open, to that.

The tank we have is a ShurFlo. Not sure of the model... there's a place for the model number on it, but nothing is there. I think it is this one, without the mounting brackets:
